Warm Potato Salad

Salads can be super special if you just give them a little bit of love. there’s a whole lot more options out there than just iceberg lettuce, tomatoes and cress.

This once is a particular favourite on our house, it’s delicious served warm, and it can be adapted for whatever protein or salad bits you’ve got in the fridge.

Warm potato salad with tahini dressing, caramelised onions, feta and steak.

New potatoes about 400g each – 300 calories.

Red onion half of a big one

1 Clove Garlic

Feta Cheese 30g each- about 80 calories.

Salad Leaves – here I used watercress, but any mixed leaves work great.

Radish, Cucumber, Tomatos can all be added or any other lovely salad bits in the fridge to add some crunch.

Watercress or spinach, any other leafy salad mix

Tahini 1 tsp – 40 calories.

Juice of a lemon

Rump Steak 200g – 250 calories.

Frylight I like using this as portion control is much easier, a spray of frylight is 1 calorie, where a tbsp of olive oil is 100…

Slice the red onions and garlic and then stick them in a small pan with about 10 sprays of frylight, low heat, just get them cooking down and yummy. Add a few more sprays of frylight after 5 mins or so if they need a bit more moisture.

Cut the new potatos in half and add them to a pan of salted water and boil – try and get the pieces of potatos a similar size so they all cook at the same speed. Around 10 mins.

Prepare your leaves, and other veggies. I like to chop different veggies into different sizes – it just makes it look nice – big leaves like water cress break into smaller easier to shovel bits.

Cut your feta into cm cube sized pieces.

Tahini dressing – in a small bowl stick a tsp of tahini, and the juice of a lemon. Stir until combined. Then season with salt and pepper. Next add a small amount of water and stir, do this until you’ve got a nice dressing consistency for drizzling over the top of your goodies.

At this point you want to cook your protein, I used a rump steak in this version but a salmon fillet, some prawns or some seitan would be a great option too!

Once your potatos are cooked (you can stick a fork through them) and your onions and garlic are transparent and delicious put them in a big bowl add about half the tahini dressing and give them a mix. Next add the feta and mix again to get it a bit melty. Finally add all your cold salad veggies and give it a good old stir up.

Divide your salad between your bowls, stick your protein on top and drizzle over the remaining dressing.

Around 700 calories 45g Protein (with the steak)
