Awesome Sauce

easy chimichurri

(with practically no calories)

Here’s a great recipe for this fresh, quick easy sauce which you can use on a million different things – tonight its going with some steak a veggies in the Doodledub house, but its ace with chicken, fish, anything really!

If you get Chimichurri sauce when you’re in a restaurant you’ll often find that its made with quite a lot of oil, whilst that makes it really yummy it doesn’t really suit for us to have everyday – this version however has no oil at all and uses a magic ingredient which if you’re not currently using you’re going to discover, and you can thank me later!

You can chuck all the ingredients into a whizzer if you want instead of chopping it yourself, but I like the herbs to stay quite chunky rather than it going into to more of a paste, totally up to you!

Everyday Chimichurri

Chop up everything in the list below and whack it all together in a bowl, use it to marinate your protein or as a sauce on the side. The only thing with any calories is the sweet soy but at 35 cals for a tbsp it packs a lot of flavour for minimal affect on your calorie count.

A Bunch of Corriander

A Bunch of Parsley

A red chilli (check how spicy it is before throwing it all in!)

A clove of garlic

The juice of 2 limes

salt and pepper

a tbsp of Ketjap Manis (sweet soy sauce)

A word on the sweet soy – I discovered this amazing ingredient whilst out in Bali last year during a cookery workshop with a lovely local, she introduced me to it and ever since its become a staple in my pantry – I find it in a local Chinese supermarket but I’m sure you can order it off the internet. It’s got the salt of a soy, but its thick and sweet almost like honey.
