Banana cake

Cake is awesome, everyone loves cake. But it’s not always at the top the list when trying to eat within a calorie deficit. I believe adherence to a calories deficit or macro balance is all about making it work for you long term. Denying yourself a slice of cake will just eventually lead to you munching a whole one down the line and that’s just simply not we are about. A homemade slice of banana bread/cake works out about 320 calories. Is a great grab and go breakfast, afternoon snack for any other time really. Once you’ve got the basic recipe down you can learn to adapt to add different fruits depending on what you’ve got!

Banana cake

3 mashed bananas

(plus one for the top if you’re feeling fancy)

220g Plain flour

1/2tsp of baking powder

240g sugar – I like soft brown but caster would do too.

125g butter

2 eggs

1 tsp of vanilla

Warm the oven to 180 C

If you’ve got a stand mixer use the K beater to cream the butter and sugar together first (if not its a cheeky arm workout for you) then add the eggs one at a time so its all smooth and combined.

Next you want the flour and baking powder – don’t worry about sifting – it will work out fine without.

Combine, then add your vanilla – you could also add some cinnamon or nutmeg here…

Finally get your mashed bananas and stir until they are just combined.

Slice your extra banana for the top longways and push just into the top of the cake- add a little extra sugar to the top so it goes crunchy and then whack it in the oven.

I usually check it after about 50mins but it may take anything up to an hour1 hour 10.

Once cooked I pull it out the tin to cool and then slice into 10 even parts.. much easier to control myself when I’ve don’t that straight away!

Once you’ve succeeded at the basic banana you can always improvise, replace 2 of the bananas with some finely chopped apple, or berries to change it up a bit!
